Katsu: my favourite dish while working in northeast japan is Katsu donburi, a bowl of steamed rice with a rich pork gravy over it, topped with a boneless pork cutlet (katsu) and poached egg overall. Very tastey and cheap, great for a chilly damp Novembery kind of evening... so if katsu and cutlet are sort of synonyms then what is bus shi tsu?a technique (shitsu) for making busses?
